Plant Date: March (spring harvest); September (fall harvest)
Planting: Spinach is a cold weather plant, so it can be planted very early in the spring and again in the fall. Plant in a spot with full sunlight and well drained soil. Plant seeds 1/2" deep and 2" apart. Thin seedlings to 12".
Care: Water well and keep soil moist with mulching. The roots are very shallow and easily damaged, so be carfeul when weeding.
Harvest: Harvest when the leaves reach desired size. If you let them get too big they will become bitter. You can harvest the whole plant at once, or cut off the outer leaves as needed and let the inner leaves continue to grow.
