Planting: For a spring planting, start the seeds indoors in early March. You can plant the later crop directly outdoors. Transplant the early crop no earlier than 2 weeks after the last average frost date, as the plants are very susceptible to cold. You can add compost to the soil before planting. Plant the seeds 1/2' deep. When transplanting, space the plants at least 12" apart.
Care: You should mulch around the plants to help hold in heat and moisture. Eggplants are very heavy feeders, so side-dress the plants with compost or manure every couple weeks. You may need to stake the plants to prevent bending.
Harvest: Harvest the plants by cutting them when they reach their full size. More fruit will continue to grow. Eggplants usually takes 60-90 days to reach maturity, but check your seed packet to be sure.
