Planting: You can plant daikon anytime after the chance of frost has passed, but they taste best when harvested in the fall. Make sure the soil is deeply tilled and rocks have been removed so the roots can grow. The soil pH should be between 5.8 and 6.8. Plant the seeds 1" deep and 2" apart. Thin the seedlings to about 6" apart.

Care: Water the daikon regularly if the weather is dry and try to keep the soil moist. You may need to mound soil around the base when the plants are young to keep the stalks from bending. Once the root starts to enlarge however, it's normal for it to push above the ground. Don't try to cover it! Weed regularly around the plants. Use fertilizer that is low in nitrogen.

Harvest: Harvest the daikon before the first hard frost. They usually take 60-70 days to reach maturity. Check your seed packet as some larger varieties may take longer.
