Plant Date: March(spring harvest); August(fall harvest)
Planting: Bok choy are a cold weather plant, so they can be planted very early in the spring. Plant them 1/2" deep and 2" apart.
Care: Thin the seedlings to 6-12" apart(depending on whether you plan to harvest them young or let them grow). Water often and keep the soil moist. If they're too dry they may go to seed early. Weed carefully around the plants. These seem to be a favorite of rabbits, so you may want to put up a fence.
Harvest: You can harvest these as soon as they reach the desired side. The leaves taste best before the plant starts to flower, but once it does you can let it go to seed and save the seeds for next year!
