Plant Date: March/April; later crop in June-September

Planting: Beets do best with a soil pH of 5.5-6. Till in aged manure before planting. Use a fertilizer with high phosphorus and low nitrogen. The soil needs to be 50°F before planting. Plant the seeds 1-2" apart and 1/2" deep. Keep soil moist for germination.

Care: You'll probably get more than one seedling from each seed, so be sure to thin them to about 3-4". Beets have very shallow roots so try not to disturb them when weeding.

Harvest: Beets can usually be harvested after about 50-70 days. Harvest when the roots reach desired size but don't wait too long! The longer you wait the tougher and woodier the roots will be. Also, don't forget about the greens! These have even more nutrients than the roots.
